Fotografiska restoran töötab 0-kulu põhimõttel. Kasutame toiduvalmistamisel leidlikke viise, ei raiska toorainet ega tekita jäätmeid. Kõik, mis õiest juureni või ninast sabani, leiab kasutust – nii köögis kui baaris. Sellest vähesest, mis alles jääb, saab aga üleöö kompost, mis jõuab ringiga tagasi põldudele ja peenardele.
Meie toidu hing on jätkusuutliku restorani eestkõneleja, mitmekülgse karjääriga (Pädaste, Fäviken Magasinet, Fulgurance), kaasaegse Eesti maitse kujundaja, Peeter Pihel. Hooajalise ja omanäolise veinikaardi eest hoolitseb Kristjan Kiho.
